Banquets/Conference Centre Chef

The Brisbane Airport Hotels Group encompasses the Pullman, Novotel and ibis Brisbane Airport Hotels, as well as the Brisbane Airport Conference Centre. With 532 guest rooms, 3 restaurants, Rooftop Bar & Restaurant, Executive Lounge and 12 meeting spaces collectively totalling 1800m2. Located at the Brisbane Airport Domestic Terminal, it is the first accommodation, meeting and event space to be developed in this precinct.

The Brisbane Airport Conference Centre boasts 11 conference and meeting rooms, including a 300 seat pillar-less ballroom, boardrooms, business centre, cloakroom and generous breakout terraces. This Centre is capable of hosting up to 600 delegates at any one time.

The group is currently seeking a Banquets / Conference Centre Chef on a full time basis. You will be responsible for overseeing the complete kitchen operation of the conference centre and report to the Executive Chef of the group.

Key Responsibilities Include but not limited to:

  • Focus will be on conference and events.
  • Writing menus, coming up with new ideas and plans for implementation of quality dishes for events, banquets and functions.
  • Prepare and present high quality dishes within company guidelines and within a timely manner.
  • Support and develop the kitchen team for high performance through discussion and training.
  • Demonstrate leadership and effective communication within the kitchen team and front of house.
  • Arrange rosters and manage staff levels according to occupancy.
  • Assist in managing food cost and labour cost and contribute to food and beverage revenue.
  • Work closely with the Chief Steward ensuring compliance with food hygiene and health and safety standards.

To be successful in this role:

  • Proven experience as a Senior Chef in a large banquet/catering operation.
  • Extensive experience in preparing exquisite food for conference and events.
  • Experience with bulk production.
  • Understand costing and labour control.
  • Demonstrate ability in planning, resourcing and controlling expenses.
  • Understanding the basics of the HACCP Standards.
  • The ability to lead, support & mentor to achieve desired results.
  • Excellent organizational skills.
  • Ability to work under pressure with an even temperament.
